The founding room was Restaurant August in New Orleans — John Besh's first restaurant, 2001 to 2003, as Bar Director and AGM. Chicago followed. The Drawing Room as Director of Operations, 2009 to 2011, across a five-venue group doing $30 million in annual revenue.
Hojoko in Boston, The Chapel and Waimea Plantation in between. San Francisco: August 1 Five as Managing Partner (2016–2019), then Complex Beverage Director at Cityscape / Hilton Union Square (2024–2025). Consulting across Berber, Shinmai, The Salt, Ettan, Novela, Hotel San Francisco, and the rest.
The press followed. Condé Nast Traveler, TimeOut, NBC Chicago, StarChefs. Not because I chased it, but because the programs spoke for themselves.
