01 · The brief
Turn-key consulting for Sushi Confidential's original Campbell flagship — 175 seats, 2012. The first formal application of the 0-to-launch methodology that became the Liquid Chef Consulting 7-phase playbook. The brand has since grown from one location to seven.
Campbell, California, 2012. Randy Musterer had built Sushi Confidential as an underground pop-up for years. The brick-and-mortar opening was the step that either made the brand a business or didn't. My engagement was the full turn-key — concept definition, menu framework, bar program, front-of-house service model, and the opening sequence.
This was the first consulting engagement I ran under the methodology that later became the LCC 7-phase playbook. The brief forced the discipline: if a 175-seat sushi restaurant couldn't open clean, the whole framework didn't hold. Concept through open, one operator, one clock.
Delivered: the concept definition, the menu framework, a bar program that worked with Japanese cooking without forcing an East-meets-West gag, the service model, and the opening sequence. Musterer and the team took it from there.
Sushi Confidential opened in Campbell in 2012 and built a clientele that outlasted the engagement. The brand has since grown to seven locations — Campbell, San Jose, Morgan Hill, Willow Glen, and multiple concessions. The longevity is the credential. The methodology that opened the first room still runs today under the LCC playbook.
