01 · The brief

220-seat Indian-inspired New American, turn-key.

Turn-key consulting on the launch of The Salt — a 220-seat Indian-inspired New American restaurant in San Ramon. Scope ran from concept through opening: concept development, menu framework, bar program, vendor selection, kitchen and front-of-house systems, and pre-opening staff training.

San Ramon. The Salt was a 220-seat full-service restaurant with an Indian-inspired New American culinary register — the kitchen's pantry reached into regional Indian spice without declaring itself an Indian restaurant. The brief was turn-key: concept through first service, one operator, one clock.

Scope covered concept development, the full menu framework, bar program from spec, vendor selection, kitchen and FOH operational systems, and pre-opening staff training. Delivered a staffed, operational restaurant on the target open date.

The Salt operated in San Ramon for a multi-year run and closed in January 2026. A 220-seat East Bay suburban room with a specific culinary register is a harder opening than a comparable downtown room; the engagement carried the venue through to a clean open.
